Ingredients:
- 2 packs of Ocean Catch Australian Flathead Fish Fillets Boneless Skinless (4 flathead fillets, cut into bite-sized pieces)
- 1 can of coconut milk
- 1 tablespoon of red curry paste
- 1 tablespoon of fish sauce
- 1 tablespoon of palm sugar
- 1 red bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon of oil
- Fresh basil leaves, for garnish
- Cooked rice, to serve
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and sauté for 2-3 minutes until softened.
- Add the red curry paste to the skillet and stir for 1-2 minutes until fragrant.
- You can adjust the amount of curry paste and fish sauce to your taste, depending on how spicy or salty you like your curry.
- Pour in the coconut milk, fish sauce, and palm sugar. Stir well to combine.
- Add the flathead pieces to the skillet and gently stir to coat them with the curry sauce. Bring the sauce to a simmer and cook for 5-7 minutes until the fish is cooked through.
- Serve the flathead curry hot over cooked rice, garnished with fresh basil leaves.
