Ingredients:

  • 500g chicken thigh mince
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1/2 cup snow peas
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp black pepper
  • Cooked rice or noodles, for serving

Method:

  1. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken mince and cook, breaking it up with a spoon, until browned.
  2. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Add the bell peppers, broccoli, and snow peas to the skillet and cook until tender-crisp, about 5 minutes.
  4. In a small bowl, whisk together the soy sauce, honey, sesame oil, ginger, and black pepper.
  5. Pour the sauce over the chicken and vegetables and stir to combine.
  6. Cook for 1-2 minutes, or until the sauce has thickened slightly.
  7. Serve immediately over cooked rice or noodles.
