Ingredients:
- Beef short ribs
- 2 teaspoons salt
- 2 teaspoons black pepper
- Olive oil
- 1 garlic bulb
- 2 teaspoons tomato purée
- 1 bottle of red wine
- Beef stock or chicken stock
- Bacon bites, chestnut mushrooms, and parsley for garnishing
Instructions:
- Cut the short ribs along the bones and season with salt and pepper.
- Heat the olive oil in a frying pan. Add the ribs and fry until they are dark and rich in colour.
- Slice the garlic bulb in half and place it alongside the ribs to infuse flavour.
- Stir in the tomato purée to create a saucy gravy. Pour in the entire bottle of red wine, bring to a boil, and then reduce the heat.
- Add the stock (beef or chicken) and cover the pan with aluminium foil. Cook for 2.5 hours at about 170°C to 180°C.
- Once cooked, mash the garlic and sieve it to create a smooth sauce. Garnish with fried bacon bites, mushrooms, and parsley before serving.
