Ingredients:
- 1 pound (450g) mixed seafood (such as salmon, cod, shrimp, clams, mussels, squid, scallops)
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can (14 ounces/400g) diced tomatoes
- 2 cups (480ml) fish or seafood broth
- 1/2 cup (120ml) white wine
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Instructions:
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the onion becomes translucent and the peppers are slightly softened.
- Add the diced tomatoes (with their juices) to the pot and stir well. Allow the mixture to simmer for a few minutes to meld the flavors.
- Pour in the fish or seafood broth and white wine. Stir in the dried thyme and oregano. Season with salt and pepper according to your taste.
- Bring the liquid to a gentle simmer. Add the mixed seafood to the pot, ensuring that the seafood is submerged in the broth. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and the clams and mussels have opened. Discard any unopened shells.
- Remove the pot from the heat. Garnish the seafood stew with freshly chopped parsley.
- Serve the seafood stew hot, accompanied by crusty bread for dipping into the flavorful broth.
