NZ Premium Grass-Fed Striploin Roast (2kg)

Preparation Time: 15 mins Cooking Time: 2½ hrs Serving: 6-8

Ingredients:

  • 1.4 to 2 kg sirloin roast
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 cup beef broth or stock
  • Vegetables like carrots, potatoes, and onions for roasting

    Instructions:

    1. Preheat your oven to 350°F (175°C).
    2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Mix well to create a paste.
    3. Pat the sirloin roast dry with paper towels. Place it on a roasting rack in a baking pan.
    4. Rub the garlic and herb paste all over the surface of the roast, ensuring it is evenly coated. Massage the paste into the meat for better flavor penetration.
    5. If desired, arrange vegetables like carrots, potatoes, and onions around the roast in the pan.
    6. Pour the beef broth or stock into the bottom of the pan. This will help keep the meat moist during cooking.
    7. Place the roasting pan with the sirloin roast into the preheated oven. Roast for about 20 minutes per pound (45 minutes per kilogram) or until the internal temperature reaches your desired level of doneness. For medium-rare, aim for an internal temperature of about 135°F (57°C). Use a meat thermometer to check the temperature.
    8. Once the roast reaches the desired temperature, remove it from the oven and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for about 15 minutes. This allows the juices to redistribute and the roast to become more tender.
    9. While the roast is resting, you can increase the oven temperature to 425°F (220°C) and continue roasting the vegetables for an additional 10-15 minutes until they are golden and tender.
    10. After resting, slice the sirloin roast against the grain into thin slices.
    11. Serve the sliced sirloin roast with the roasted vegetables and any pan juices as a delicious main course.
