Ingredients
- 2 cutlets of lamb racks
- salt & pepper to taste
- 2 tablespoon of olive oil
For Red Wine Sauce:
- Half chopped onion
- 1 cup of red wine
- 1 teaspoon fresh rosemary (1/4 teaspoon dried also nice)
- 1 teaspoon chopped chives
- 1 teaspoon of fresh thyme
- 1 tablespoon of unsalted butter
- 1 cup beef stock
- salt & pepper to taste
Method
Cook the Lamb Rack:
- Preheat the oven to 200 degree
- Rub the lamb with salt & pepper to marinate
- Put olive oil on skillet over mid high heat.
- Place the lamb rack in the skillet by facing the meaty downward.
- Sear until all sides are nicely browned.
- Transfer the skillet to oven and ready to roast for 30-40 minutes.
- Take out the lamb rack for rest.
Prepare the Sauce:
- Use the cooked skillet with the juice, add in the chopped onion, beef stock & red wine. Boil it and turn into medium heat then stir for few minutes.
- Add in the chives, thyme, butter
- Season the sauce with salt & pepper.
Ready to serve with red wine sauce. Happy eating!
