Ingredients:
- 4 pork loin steaks
- 1 tablespoon of olive oil
- 2 shallots, finely chopped
- 2-3 large field mushrooms or portobello mushrooms, chopped
- 2 sprigs of rosemary, chopped
- A splash of cognac or brandy (optional)
- 1 tablespoon of flour (only if using cream instead of creme fraiche)
- 80ml (1/4 cup) pork or chicken stock
- 1 tablespoon of whole-grain mustard
- 200g (2/3 cup) creme fraiche or heavy cream
- Salt and pepper to taste
Instructions:
- Season the pork loin steaks with sea salt.
- Heat a tablespoon of olive oil in a cast iron or stainless steel pan. Brown the pork loin steaks for no longer than 2 minutes on each side. Remove the pork and set it aside on a separate plate.
- In the same pan, add the chopped shallots. Cook them on medium heat, stirring constantly, for about 3 minutes. Then add the chopped mushrooms and rosemary, and continue cooking for an additional 5 minutes.
- Once the shallot and mushroom juices have evaporated and the pan is dry, add a splash of cognac while scraping the burnt bits with a wooden spoon. If you're using cream instead of creme fraiche, sprinkle in the flour and stir to combine.
- Add the stock, whole-grain mustard, and creme fraiche to the pan. Stir everything together.
- Return the pork loin steaks to the pan. Bring the mixture to a boil, then reduce the heat and let it simmer for 2 minutes. Remove the pan from the heat.
- Taste the sauce and add salt and pepper as needed.
- Serve the pork loin steaks with the sauce, along with rice or potatoes.
