How To Prepare Oxtail Stew?

Ingredients:
- 1Kg Oxtail
- Cooking Oil
- 2 Tablespoons Sugar
- 1 Onion
- 2 Garlic Cloves
- Mixed Bell Peppers
- 1 teaspoon All-purpose Seasoning
- 2 teaspoons Curry powder
- 1 teaspoon Chilli Flakes
- 1 teaspoon Tomato Ketchup
- 1/2 can Tomatoes
- 1/4 cup Red wine
- 1 cup Chicken Stock
- 3 cups Water in between cooking
Instructions:
- Heat some oil in a pot
- add the sugar and allow it to caramelise (careful not to burn)
- Add oxtail and fry until golden brown
- Add the onion and fry until soft
- season to taste with salt
- Stir in the garlic cloves and bell peppers
- Add all the spices and allow to cook for 2 minutes
- Stir in the ketchup
- Add the tomatoes and allow them to cook for 2-3 minutes
- Pour in the red wine and chicken stock
- Lower heat and leave to slow cook up to 4 hours (adding water in between cooking)
