Ingredients:
- 4 black cod fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 slices of bacon, or 10-20g bacon bites
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- Lemon wedges (for serving)
- Fresh parsley, chopped (for garnish)
Method:
- Preheat your oven to 400°F (200°C).
- Season the black cod fillets with salt and pepper on both sides.
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, chopped thyme, and chopped rosemary.
- Place the black cod fillets in a baking dish or on a baking sheet lined with parchment paper.
- Drizzle the prepared olive oil mixture over the fillets, ensuring they are well coated.
- Place the baking dish or sheet in the preheated oven and roast the black cod for about 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time may vary slightly depending on the thickness of the fillets.
- Along the time baking the fish, cook the bacon till golden in a pan, set aside and rest till crispy.
- Once cooked, remove the black cod from the oven and let it rest for a few minutes.
- Serve the roasted black cod fillets with lemon wedges on the side for squeezing over the fish. Garnish with freshly chopped parsley and bacon.
