How To Prepare One Pot Chicken Drumsticks With Mixed Beans Rice? 😍😍🌈🌈

Ingredients:

8 chicken drumsticks
  • 2 1/2 tsp. kosher salt, divided
  • 1 tsp. freshly ground black pepper
  • 3 Tbsp. extra-virgin olive oil
  • 1 onion, finely chopped
  • 1 tsp. ground cinnamon or cumin
  • 1 tsp. ground turmeric, curry powder, or ground coriander
  • 1/2 cup white rice (any type except sticky rice)
  • 1 (15-oz.) can mixed beans (chickpeas, white beans, black beans), drained and rinsed
  • 1/2 cup dried fruit, such as currants, raisins, cherries, or cranberries (optional)
  • 1/2 tsp. crushed red pepper flakes (optional)
  • 1/4 cup coarsely chopped tender herbs, such as cilantro, parsley, mint, basil, and/or dill

    Instructions:

    1. Season the chicken drumsticks on all sides with 2 tsp. salt and 1 tsp. black pepper.
    2. Heat olive oil in a large deep-sided pan over medium-high heat. Add the chicken and cook, turning occasionally, until the skin is golden brown and the chicken is cooked through in about 10-15 minutes. Transfer the chicken to a plate.
    3. In the same pan, add the chopped onion, ground cinnamon or cumin, and ground turmeric, curry powder, or ground coriander. Cook over medium-high heat, stirring constantly, until fragrant, about 1 minute.
    4. Add the white rice to the pan and stir to coat it with the spices and onions. Add 1 1/4 cups of hot water, scraping up any browned bits from the bottom of the pan. Stir in the mixed beans, dried fruit (if using), crushed red pepper flakes (if using), and the remaining 1/2 tsp. salt.
    5. Return the chicken drumsticks to the pan, nestling them into the rice mixture. Bring the liquid to a boil, then immediately reduce the heat to low, cover the pan, and let it simmer until the rice is tender and the chicken is cooked through in about 20-25 minutes.
    6. Remove the pan from the heat and let it sit for 5 minutes. Fluff the rice with a fork, then sprinkle the coarsely chopped herbs over the dish.
