Ingredients:

  • 2 crab cakes
  • 1 small butternut squash
  • 3 medium Yukon Gold potatoes
  • 2 medium red bell peppers
  • 1 medium sweet potato
  • 1 medium red onion
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • Salt and black pepper

Instructions:

  1. Preheat the oven to 475°F (245°C). Peel the butternut squash, Yukon Gold potatoes, bell peppers, sweet potato, and red onion and cube into ½-inch pieces. Seed the squash and bell peppers before cubed.
  2. In a large bowl, combine the butternut squash, Yukon Gold potatoes, bell peppers, sweet potato, and red onion pieces.
  3. In a small bowl, stir together the olive oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper.
  4. Pour the oil mixture over the vegetables and toss until well coated.
  5. Transfer the vegetables to a large roasting pan and spread in an even layer.
  6. Roast in the preheated oven, stirring every 10 minutes, until the vegetables are slightly caramelized and cooked through, about 35-40 minutes.
  7. While the vegetables are roasting, cook the crab cakes according to the package instructions.
  8. Serve the roasted vegetables alongside the cooked crab cakes.
