Ingredients:
- 2 crab cakes
- 1 small butternut squash
- 3 medium Yukon Gold potatoes
- 2 medium red bell peppers
- 1 medium sweet potato
- 1 medium red onion
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- Salt and black pepper
Instructions:
- Preheat the oven to 475°F (245°C). Peel the butternut squash, Yukon Gold potatoes, bell peppers, sweet potato, and red onion and cube into ½-inch pieces. Seed the squash and bell peppers before cubed.
- In a large bowl, combine the butternut squash, Yukon Gold potatoes, bell peppers, sweet potato, and red onion pieces.
- In a small bowl, stir together the olive oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper.
- Pour the oil mixture over the vegetables and toss until well coated.
- Transfer the vegetables to a large roasting pan and spread in an even layer.
- Roast in the preheated oven, stirring every 10 minutes, until the vegetables are slightly caramelized and cooked through, about 35-40 minutes.
- While the vegetables are roasting, cook the crab cakes according to the package instructions.
- Serve the roasted vegetables alongside the cooked crab cakes.
