Australian Premium Huon Salmon Whole Fillet Skin-On

Preparation Time: 15 mins Cooking Time: 15 mins Serving: 4 
 
Ingredients: 

  • 4 salmon fillets
  • 1/4 cup kecap manis (Indonesian sweet soy sauce) 
  • 2 tbsp vegetable oil 
  • 2 shallots, finely chopped 
  • 3 cloves garlic 
  • 1 tbsp tamarind paste 
  • 1 tbsp brown sugar 
  • 1 tsp ground coriander 
  • 1 tsp ground cumin 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp salt 
  • 1/4 tsp black pepper 
  • Lime wedges, for serving  

Instructions: 

  1. Preheat your grill to medium-high heat. 
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the shallots and garlic and sauté until softened and fragrant, about 2-3 minutes. 
  3. Add the kecap manis, tamarind paste, brown sugar, coriander, cumin, turmeric, salt, and black pepper to the pan. Stir to combine and cook for another 2-3 minutes, until the sauce has thickened slightly. 
  4. Brush the salmon fillets with the sauce on both sides, reserving some sauce for later. 
  5. Place the salmon fillets on the grill, skin-side down, and cook for 5-6 minutes. 
  6. Flip the salmon fillets over and brush with more sauce. Cook for another 5-6 minutes, until the salmon is cooked through and has nice grill marks. 
  7. Serve the grilled salmon immediately, with lime wedges on the side for squeezing over the top.
