Australian Premium Huon Salmon Whole Fillet Skin-On

Ingredients:
- 4 salmon fillets
- 1/4 cup kecap manis (Indonesian sweet soy sauce)
- 2 tbsp vegetable oil
- 2 shallots, finely chopped
- 3 cloves garlic
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Lime wedges, for serving
Instructions:
- Preheat your grill to medium-high heat.
- In a small saucepan, heat the vegetable oil over medium heat. Add the shallots and garlic and sauté until softened and fragrant, about 2-3 minutes.
- Add the kecap manis, tamarind paste, brown sugar, coriander, cumin, turmeric, salt, and black pepper to the pan. Stir to combine and cook for another 2-3 minutes, until the sauce has thickened slightly.
- Brush the salmon fillets with the sauce on both sides, reserving some sauce for later.
- Place the salmon fillets on the grill, skin-side down, and cook for 5-6 minutes.
- Flip the salmon fillets over and brush with more sauce. Cook for another 5-6 minutes, until the salmon is cooked through and has nice grill marks.
- Serve the grilled salmon immediately, with lime wedges on the side for squeezing over the top.
