    Yield:

    Ingredients:

    • 2 pork baby back ribs
    • 1 cup barbecue sauce

    Dry Rub

    • ⅓ cup brown sugar
    • 1 tbsp sea salt
    • 2 tsp black pepper
    • 1 tbsp chilli powder
    • 2 tsp smoked paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp dry mustard
    • 1 tsp oregano

    Instructions:

    1. Mix all the dry rub ingredients in a small bowl, breaking up any lumps with a spoon.
    2. Generously coat both sides of the pork baby back ribs with the dry rub, rubbing the seasonings into the meat. Set the ribs in the fridge covered for 90 minutes.
    3. Wrap each rib rack individually in a double layer of aluminium foil, tucking the ends in to create a sealed package. Arrange the foil-wrapped racks in opposite directions to avoid the seams aligning.
    4. Preheat your grill to 350°F (177°C), setting it up for indirect heat with one area left unlit.
    5. Place the foil-wrapped ribs on the unlit section of the grill. Close the lid and let the ribs cook slowly using indirect heat for 1 hour.
    6. Carefully unwrap the ribs and brush them generously with your favourite barbecue sauce.
    7. Place the sauced ribs directly over the hot, clean, and oiled grill grates. Grill, flipping once until the barbecue sauce is caramelised on both sides, about 2-3 minutes per side. Serve.
