How To Prepare Curry Cauliflower Rice with Lamb Mince? 😍😍🌈🌈

Ingredients:

  • 500g lamb mince
  • 2 tbsp coconut oil or olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 500g cauliflower, riced
  • 1/2 cup coconut milk
  • 1 tbsp curry powder
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh mint, chopped (optional)
  • Fresh cilantro, for garnish (optional)

Instructions:

  1. In a large skillet or wok, heat the coconut oil over medium-high heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the lamb mince, breaking it apart with a spoon. Add the ground cumin, coriander, cinnamon, salt, and pepper. Cook for about 5-7 minutes until the lamb is browned and cooked through.
  5. Add the riced cauliflower to the skillet with the lamb. Stir well to combine.
  6. Pour in the coconut milk and add the curry powder. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  7. Stir in the diced tomatoes and allow to simmer for another 3-4 minutes until heated through. If using, add fresh mint at this stage.
  8. Plate the dish and garnish with fresh cilantro, if desired.
