Ingredients:
- 500 grams frozen spinach (thawed)
- 2 tablespoons butter
- 1 teaspoon garlic, minced
- 1 1/2 tablespoons all-purpose flour
- 1 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
Instructions:
- Thaw the frozen spinach in a colander and squeeze out as much moisture as possible. Set aside.
- In a sauté pan or saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes, stirring until softened and fragrant.
- Whisk in the flour, stirring until well blended to make the roux. Cook for another 1-2 minutes.
- Gradually stir in the milk, whisking constantly until the mixture thickens.
- Stir in the spinach, Parmesan cheese, nutmeg, and season with salt and pepper if desired. Continue to cook over low heat for about 5 minutes, stirring frequently, until the spinach is tender and heated through.
