Ocean Catch Australian Prawns Marinated in Chilli & Garlic (250g)

Ingredients:
- 250g tiger prawns or prawns marinated in chilli and garlic
- 2 tablespoons peanut oil
- 3 garlic cloves, finely chopped
- 2 eggs, lightly beaten
- 3 green onions (shallots), trimmed and sliced
- 5 cups cold cooked jasmine rice
- 1 1/2 cups frozen green peas
- 1/4 cup reduced-salt soy sauce
- 1/4 cup sweet chilli sauce
- 1/2 cup chopped coriander leaves + extra leaves to serve
Instructions:
- In a large snap lock plastic bag, combine 1 tablespoon of oil and chopped garlic. Add prawns to the bag and toss to coat them in the mixture. Seal the bag and refrigerate for 15 minutes.
- Heat the remaining 1 tablespoon of oil in a wok over high heat. Swirl the beaten eggs around the wok and cook for 1-2 minutes until set. Fold the omelette over, transfer it to a plate, and then roll it up and slice it into thin strips.
- Add the marinated prawns to the wok and stir-fry for 2-3 minutes until they turn pink and are almost cooked through. Add the sliced green onions, cooked rice, and frozen peas to the wok. Stir-fry until the mixture is hot and well combined.
- Toss in the sliced omelette, soy sauce, sweet chilli sauce, and chopped coriander. Stir-fry for another minute to coat everything evenly and allow the flavors to meld together.
- Remove the wok from heat. Serve the Chilli Garlic Prawn Fried Rice garnished with extra coriander leaves.
