Ingredients:
- 4 school shark fillets (about 150-200g each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 2 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- Lemon wedges, for serving
Instructions:
- Preheat your oven to 200°C (400°F).
- Pat the school shark fillets dry with paper towels. Season both sides with salt and pepper.
- In a bowl, combine the breadcrumbs, Parmesan cheese, parsley, dill, minced garlic, lemon zest, and a pinch of salt and pepper. Drizzle in 1 tablespoon of olive oil and mix until well combined.
- Place the school shark fillets in a baking dish. Drizzle the remaining olive oil and lemon juice over the fillets. Evenly distribute the herb breadcrumb mixture over the top of each fillet, pressing down gently to adhere.
- Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
- Remove from the oven and serve immediately with lemon wedges on the side.
