How To Prepare Australian Flathead Fish Fillets With Cherry Tomato?

Ingredients:
- 4 Flathead fillets
- 1 1/2 tablespoons olive oil
- 2 garlic cloves, thinly sliced
- 500g cherry tomatoes, halved
- 2 tablespoons balsamic vinegar
- 1 tablespoon shredded basil leaves
- 2 cups rocket leaves
Instructions:
- Heat 2 teaspoons oil in a pan over medium heat. Cook garlic, stirring, for 1-2 minutes until softened. Add tomatoes & balsamic, season, then cover & cook over low heat for 3-4 minutes until tomatoes soften but hold their shape. Remove pan from heat, then stir in basil.
- Meanwhile, season fish. Heat remaining 1 tablespoon oil in a frying pan over medium-high heat. Cook fish for 2 minutes each side or until golden & cooked through. Divide fish fillets among plates, top with sauce & serve with rocket leaves.
