如何準備广式粽子?
材料:
36-40片乾粽葉(每個粽子用2至3片)
5杯生糯米
2湯匙(加2茶匙)生抽
2茶匙(加1/2茶匙)鹽
2/3杯生花生
1磅五花肉,切成12等份
1/2茶匙糖
2茶匙紹興酒
1/2茶匙白胡椒粉
1茶匙油
1/2杯水
6顆鹹鴨蛋黃
3根臘腸
製作說明:
提前一晚將粽葉、糯米和花生浸泡過夜。
在碗中,將五花肉、2茶匙醬油、糖、紹興酒、鹽和白胡椒拌勻,醃製過夜。
第二天,清洗並沖洗每片粽葉,保持在水中防止乾燥。
將米徹底瀝乾,並與醬油和鹽拌勻。
將花生煮沸5分鐘,瀝乾備用。
在中火加熱炒鍋中的油,將五花肉煎幾分鐘。
加入水至炒鍋,蓋上蓋子煮5-10分鐘,直到水分蒸發。將五花肉取出,放涼。
將蛋黃切半,臘腸切成小塊。
疊放三片粽葉,剪掉葉子的末端,捲成錐形。
在底部放入一層米,然後加入五花肉、蛋黃、花生和臘腸,再加一些米在頂部。
將粽葉包裹填料,折下來包裹住內容物,形成粽子的形狀。
用繩子綁緊,並剪去多餘的葉子。
將粽子放入鍋中,用冷水浸沒,用盤子壓住粽子。
將水煮沸,然後轉小火煨煮。煨煮7-8小時,期間如有需要,定時添加開水。
