如何準備回鍋智利豬肉?

材料:

  • 11盎司帶皮無骨五花肉
  • 1片(3/4英寸厚)新鮮薑,輕拍壓扁
  • 1/4茶匙花椒
  • 1 1/2湯匙豆瓣醬
  • 2茶匙甜麵醬
  • 1/4茶匙白糖
  • 3湯匙植物油
  • 1個青椒,去籽切成3/4英寸塊
  • 1/4茶匙鹽

製作說明:

  1. 將五花肉放入鍋中,加入足夠的水覆蓋。加入薑和花椒。用中高火加熱至小滾,然後轉中小火。蓋上鍋蓋煮約20分鐘,直至部分油脂煉出。
  2. 將豬肉取出,放涼至室溫,約15分鐘。瀝乾水分後,將豬肉切成約1/8英寸厚的薄片。將豬肉片放回鍋中,加入豆瓣醬、甜麵醬和糖。蓋上鍋蓋,用中火煮15至20分鐘,直至豬肉變嫩。
  3. 在炒鍋中用中火加熱1/2茶匙油,加入青椒和鹽,翻炒至開始變軟,約3至5分鐘。將青椒盛出,備用。
  4. 在炒鍋中用中高火加熱剩餘的2 1/2湯匙油,加入豬肉片,翻炒至肉片開始縮小並呈現棕色,約3至5分鐘。加入青椒回到鍋中,翻炒至香氣四溢,約2分鐘即可。
