這是一道傳統的豬肉料理,在香港被稱為奶奶的食譜。五花肉與醬油、肉桂、大蒜和八角一起燉煮,風味濃郁。

如何準備紅燒肉?

材料:

  • 1磅五花肉,切片
  • 2湯匙植物油
  • 1根(3英寸)肉桂棒
  • 3顆八角
  • 1/4杯生抽
  • 1/4杯紹興酒
  • 3湯匙老抽
  • 3湯匙白糖,或根據口味調整
  • 10瓣大蒜,去皮
  • 1/4杯水,或根據需要添加

製作說明:

  1. 將一鍋水煮沸,加入五花肉。煮至五花肉變軟,約5分鐘。瀝乾並冷卻五花肉至可以輕鬆處理,約5至10分鐘。切成2英寸的塊狀。
  2. 在大鍋中用中小火加熱植物油。加入肉桂棒和八角,煎至香味撲鼻,約30秒。加入五花肉、生抽、紹興酒、老抽、糖和大蒜,攪拌均勻。將火調至非常小的火,慢煮,偶爾攪拌,如果醬汁減少太快可以適量加水,煮至五花肉變嫩,約50分鐘。
  3. 稍微調高火力,繼續慢煮,直到醬汁變成濃稠黏稠的狀態,約10分鐘。取出肉桂棒和八角,丟棄即可。
