燉牛小排食譜

原料

  • ~1.5kg去骨牛小排切成~2cm塊
  • 2杯紅酒
  • 2杯雞湯
  • 1/4 杯麵粉
  • 1根白胡蘿蔔,切成1.5厘米的三角形塊
  • 一些百里香葉
  • 胡椒和鹽
  • 1小塊姜

方法

  1. 將排骨和麵粉混合在一個大碗裡。
  2. 在砂鍋中加熱一些油,然後將混合好的排骨放入高溫中,直到全部變成褐色,大約需要5分鐘。
  3. 加入酒和雞高湯,煮沸後轉文火。
  4. 蓋上蓋子,用小火加熱至牛肉變軟,大約需要 2-2.5 小時。
  5. 加入胡蘿蔔、百里香和生薑。在大約 30 分鐘內繼續蓋上蓋子和小火。
  6. 用鹽調味,準備上桌!

材料:

  • 1.5kg beef fingers/short ribs cut into ~2cm pieces
  • 2 cups of red wine
  • 2 cups of chicken stock
  • 1/4 cup of flour
  • 1 white carrot, cut into triangular chunks in 1.5cm piece
  • some thyme leaves
  • pepper and salt
  • 1 small piece of ginger

製作說明:

  1. Mix the short ribs with flour in a big bowl.
  2. Heat some oil in a casserole, then put the mixed short ribs over high heat until all browned, it takes around 5 minutes.
  3. Add the wine and chicken stock, turn to simmer heat after boiled.
  4. Cover with lid and over low heat until the beef is tender, it takes around 2-2.5 hours.
  5. Add in the carrots, thyme and ginger. Continue to cover with lid and low heat in about 30 minutes.
  6. Season with salt and prepare and ready to serve!
