製作方法:
在烹飪前 8 小時,用廚房用紙將牛排拍乾,並用鹽和胡椒大量調味。
在厚底煎鍋中以大火加熱油。 確保平底鍋足夠大,能舒適地放入兩塊牛排。 油閃閃發光後,將火調至中高,加入奶油。 讓奶油發出噝噝聲。
小心地將牛排放入平底鍋中,將蒜瓣和新鮮香草塞在邊緣。

材料:
- 2 700g Thick-cut steaks
- Salt
- Pepper
- 1tbsp Cooking oil
- 25g Butter
- 1 Garlic cloves
- Fresh herbs (such as rosemary or thyme)
製作說明:
- Up to 8 hours before cooking, pat the steaks dry with kitchen paper and season them generously with salt and pepper.
- Heat the oil in a heavy-based frying pan over high heat. Make sure the pan is large enough to comfortably fit both steaks. Once the oil is shimmering, reduce the heat to medium-high and add the butter. Allow the butter to sizzle.
- Carefully place the steaks in the pan, tucking the garlic cloves and fresh herbs in at the sides.
- Stand over the steaks with a pair of tongs and sear them, turning every 30 seconds to 1 minute, until they develop a nice brown crust. The cooking time will vary depending on your desired level of doneness: approximately 4 minutes for rare, 5-6 minutes for medium, and 8-10 minutes for well done. If you have a digital cooking thermometer, aim for internal temperatures of 50°C for rare, 60°C for medium, and 70°C for well done.
