Ingredients:
2 x EUROPEAN ORGANIC MIXED VEGETABLES (400G)
1 ½ cups sweet potato (peeled & chopped)
1 cup onions (sliced)
2 cloves garlic cloves (finely chopped)
1 ½ tbsps paprika
1 tsp cumin powder
½ tsp ras el hanout
½ tsp black pepper
4 tbsps olive oil
⅔ cup vegetable stock
1.333 cups cherry tomatoes (halved if necessary)
Method:
1. Mix together the garlic, spices & the oil.
2. Stir in the vegetables (apart from the tomatoes) & fry in a tagine on all sides.
3. Add the stock, cover & braise on a medium heat for around 20 min.
4. Add the tomatoes & simmer for another 5-10 min.
Season to taste, sprinkle with coriander & serve immediately.
