如何準備多利魚配酸豆橄欖番茄沙 😍😍🌈🌈

材料

4 x 150 克多利魚柳

海鹽和現磨黑胡椒

橄欖油

10 克奶油

檸檬汁(半顆)

250 公克車厘茄,切半或切四份

去核黑橄欖

2 個小紅洋蔥,去皮切片

50 南歐酸豆

50 克羅勒嫩芽

製作說明

                在一個大碗中,放入番茄、橄欖和紅洋蔥加入橄欖油、酸豆、鹽和一半的羅勒攪拌均勻醃製至少一小時後再食用

                用鹽和胡椒粉輕輕調味多利魚

                用大火加熱不沾鍋,加入少許橄欖油油熱後,小心地將魚片魚肉朝下放入平底鍋中

                在鍋中加入奶油和檸檬汁讓魚在不受干擾的情況下烹調 1 分鐘

                小心地將魚從鍋中撈出,讓多餘的液體瀝乾,然後將魚片皮朝下放在沙

                將沙平均分配到 4 個碗中,並用湯匙淋上盤中的汁

                將剩餘的羅勒芽撒在裝盤的魚和沙周圍

                材料:

                • 4 x 150g fillets of John Dory
                • Sea salt and freshly ground black pepper
                • Olive oil
                • 10g butter
                • Juice of half a lemon
                • 250g small plum vine tomatoes, halved or quartered
                • Black olives, pitted
                • 2 small red onions, peeled and finely sliced
                • 50g fine capers
                • 50g basil shoots

                製作說明:

                1. In a large bowl, combine the tomatoes, olives, and red onions. Add the olive oil, capers, salt, and half of the basil shoots. Mix well to combine. Allow the salad to marinate for at least an hour before serving.
                2. Lightly season the John Dory fillets with salt and pepper.
                3. Heat a non-stick frying pan over high heat and add a splash of olive oil. Once the oil is hot, carefully place the fillets flesh-side down in the pan, laying them away from you to avoid any splash.
                4. Add the butter and lemon juice to the pan. Allow the fish to cook undisturbed for 1 minute.
                5. Carefully lift the fish out of the pan, allowing any excess liquid to drain, and place the fillets skin-side down on top of the salad.
                6. Divide the salad equally among 4 bowls and spoon over the juices that have collected in the tray.
                7. Scatter the remaining basil shoots around the plated fish and salad.
