Ingredients:
2 Saddle Tail Snapper Fillet Skin On 280g (4 fillets)
2 tablespoons of olive oil
Salt and pepper to taste
For pesto sauce
1 cup fresh basil leaves
1/4 cup grated Parmesan cheese
1/4 cup pine nuts or walnuts
1-2 garlic cloves, peeled
1/4 cup olive oil
Salt and pepper to taste
How to Cook:
Blend basil, garlic, pine nuts, Parmesan cheese, and olive oil until smooth for a pesto sauce. Season with salt and pepper to taste. Set aside for later use.
1. Preheat your oven to 375°F.
2. Season the snapper fillets with salt and pepper.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Add the snapper fillets and cook for 3-4 minutes on each side or until golden brown.
5. Transfer the fillets to a baking dish and bake for 5-7 minutes, or until the fish is cooked through.
6. In a small bowl, mix the pesto sauce with a tablespoon of water to thin it out slightly.
7. Spoon the pesto sauce over the cooked fish fillets.
8. Serve immediately, garnished with fresh herbs or lemon wedges if desired.
