節日暖身燉羊肉和土豆食譜

原料:

1 X 新西蘭優質草飼羊肩肉,烤結無骨(1.16 公斤起),切成 1 英寸塊
1湯匙。植物油
1 個洋蔥,切碎
2根胡蘿蔔,去皮並切成圓形
2 根芹菜,切碎

現磨黑胡椒
3 瓣大蒜,切碎
1/4 杯番茄醬
1 茶匙。孜然粉
1 茶匙。熏制辣椒粉
6杯牛肉湯
1杯紅酒
1湯匙。伍斯特沙司
3 枝新鮮迷迭香
2 片月桂葉
2 磅小土豆,減半
1/4 杯新鮮切碎的歐芹,用於裝飾

方法:

1. 將羊肉切成約 1 英寸的塊。
2. 在大砂鍋烤箱中用中高火加熱油。加入羊肉,四面煎至焦黃,10 分鐘。轉移到盤子裡。
3. 在同一個鍋中,將洋蔥、胡蘿蔔和芹菜煮軟,持續 5 分鐘。用鹽和胡椒調味。加入大蒜、番茄醬、孜然和辣椒粉,煮至大蒜散發出香味,番茄醬變黑,2 分鐘。
4. 將羊肉放回砂鍋中,然後加入肉湯、葡萄酒、伍斯特沙司、迷迭香和月桂葉。
5. 煮沸後轉小火慢燉。用鹽和胡椒調味。蓋上蓋子,用文火煮至羊肉變軟,30 分鐘。
6. 加入土豆,蓋上鍋蓋,煮 30 分鐘,直至土豆變軟,燉湯變濃稠。
7. 上桌前去掉月桂葉和迷迭香,撒上歐芹。

材料:

  • 1.5kg Lamb meat, cubed into 1\ pieces
  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 2 carrots, peeled and cut into rounds
  • 2 stalks celery, chopped
  • Salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 6 cup beef broth
  • 1 cup red wine
  • 1 tbsp. Worcestershire sauce
  • 3 sprigs fresh rosemary
  • 2 bay leaves
  • 2 lb. baby potatoes, halved
  • 1/4 cup freshly chopped parsley, for garnish

製作說明:

  1. Cut the lamb into approx 1\ pieces.
  2. In a large casserole oven pot over medium-high heat, heat the oil. Add lamb & cook on all sides until seared, 10 minutes. Transfer to a plate.
  3. In the same pot, cook onion, carrots, & celery until soft, 5 minutes. Season with salt & pepper. Add garlic, tomato paste, cumin, & paprika & cook until garlic is fragrant & tomato paste has darkened, 2 minutes.
  4. Add lamb back to the casserole pan then add broth, wine, Worcestershire sauce, rosemary, & bay leaves.
  5. Bring to a boil then reduce heat to a simmer. Season with salt & pepper. Cover & let simmer until lamb is tender, 30 minutes.
  6. Add potatoes & simmer, covered, until potatoes are tender & stew has thickened, 30 minutes.
  7. Remove bay leaves & rosemary & garnish with parsley before serving.
