如何準備經典羊排?
材料:
- 1或更多的羊肋排,每排7至8根肋骨(每排1 1/4至2磅,約可供2至3人食用)

- 將羊肋排用迷迭香、百里香和大蒜的混合物塗抹均勻。撒上現磨黑胡椒。將羊肋排放入一個厚實的塑料袋中,加入橄欖油。
- 將油塗抹均勻,讓羊肋排完全覆蓋。盡量擠出袋中的空氣並封口。將袋子放入容器中,以防袋子漏油。
- 將羊肋排放入冰箱中醃製過夜,或者在室溫下醃製1.5至2小時,直到羊肉達到室溫。
- 烹飪前1.5至2小時將羊肋排從冰箱中取出,讓它回到室溫(如果肉未達到室溫,將難以均勻烹調)。
- 預熱烤箱至450°F,並將烤架放置在烤箱中央位置。
- 用鋒利的刀將羊肋排的脂肪表面劃上淺痕,每隔約1英寸劃一次。將羊肋排均勻撒上鹽和胡椒。將羊肋排骨頭朝下(脂肪面朝上)放入鋪有鋁箔的烤盤中。將暴露出來的肋骨包裹上鋁箔,以防燒焦。
