紅糖大蒜黃油烤豬排食譜

不含歐盟激素的豬頸肉|無肩牛排 (~2CM 厚, 250G)

準備時間:10 分鐘/烹飪時間:2 小時 15 分鐘/份量:6 至 8 人

原料:

4 x 不含歐盟激素的豬頸肉 |無肩肉牛排 (~2CM 厚, 250G) 對半切成 8 塊
每種鹽和胡椒粉 1 茶匙
100 克/7 湯匙無鹽黃油
1/2 杯 / 80 克紅糖,散裝
1/4 杯/65 毫升蘋果醋(白葡萄酒或紅葡萄酒醋也可以)
4 瓣大蒜 ,剁碎的
每種鹽和胡椒粉 1/4 茶匙

方法:

1. 將烤箱預熱至 160C/320F(標準)或 140C/290F(風扇)。
2. 將醬料放入平底鍋中,中火加熱。一旦糖漿融化,攪拌混合,然後靜置 1 - 2 分鐘,直到糖融化。遠離熱源。
3. 在豬肉片上撒上鹽和胡椒粉。
4. 將鍋鋪上箔紙,然後鋪上羊皮紙/烘焙紙,將豬肉放入鍋中。
把醬汁倒在豬肉上。用箔紙覆蓋。烘烤 1 小時 15 分鐘。
從烤箱中取出,去除箔紙。轉豬肉。不蓋蓋子返回烤箱烘烤 20 分鐘。
5. 從烤箱中取出。把豬肉翻過來,用勺子把鍋裡的汁倒過來。返回烤箱烘烤 20 - 30 分鐘,或直到豬肉呈金黃色,醬汁變成稀糖漿(冷卻後變稠)。
6. 靜置5分鐘,然後把豬肉翻過來裹上醬汁。將豬肉和糖漿醬汁一起上桌。

與土豆和捲心菜一起食用

材料:

  • 4 pork collar steaks, cut in half to make 8 pieces, ~110g each
  • 1 tsp each salt and pepper
  • 100 g / 7 tbsp unsalted butter
  • 1/2 cup / 80g brown sugar , loosely packed
  • 1/4 cup / 65 ml cider vinegar (white wine or red wine vinegar also fine)
  • 4 garlic cloves
  • 1/4 tsp each salt and pepper

製作說明:

  1. Preheat oven to 160C/320F (standard) or 140C/290F (fan).
  2. Place Sauce ingredients in a saucepan over medium heat. Once better has melted, stir to combine then leave for 1 - 2 minutes until sugar is melted. Remove from heat.
  3. Sprinkle pork pieces all over with salt & pepper.
  4. Line pan with foil then parchment / baking paper, place pork in pan.
  5. Pour Sauce all over pork. Cover with foil. Bake for 1 hour 15 minutes.
  6. Remove from oven, remove foil. Turn pork. Return to oven uncovered for 20 minutes.
  7. Remove from oven. Turn pork, spoon pan juices over. Return to oven for 20 - 30 minutes or until pork is golden & sauce has reduced to a thin syrup (thickens more when it cools).
  8. Stand for 5 minutes, then turn pork to coat in sauce. Serve pork with syrupy pan sauce.
  9. Serve with Potatoes & Cabbage
