4 x 不含歐盟激素的豬頸肉 |無肩肉牛排 (~2CM 厚, 250G) 對半切成 8 塊
每種鹽和胡椒粉 1 茶匙
100 克/7 湯匙無鹽黃油
1/2 杯 / 80 克紅糖,散裝
1/4 杯/65 毫升蘋果醋(白葡萄酒或紅葡萄酒醋也可以)
4 瓣大蒜 ,剁碎的

方法:
1. 將烤箱預熱至 160C/320F(標準)或 140C/290F(風扇)。
2. 將醬料放入平底鍋中,中火加熱。一旦糖漿融化,攪拌混合,然後靜置 1 - 2 分鐘,直到糖融化。遠離熱源。
3. 在豬肉片上撒上鹽和胡椒粉。
4. 將鍋鋪上箔紙,然後鋪上羊皮紙/烘焙紙,將豬肉放入鍋中。
把醬汁倒在豬肉上。用箔紙覆蓋。烘烤 1 小時 15 分鐘。
從烤箱中取出,去除箔紙。轉豬肉。不蓋蓋子返回烤箱烘烤 20 分鐘。
5. 從烤箱中取出。把豬肉翻過來,用勺子把鍋裡的汁倒過來。返回烤箱烘烤 20 - 30 分鐘,或直到豬肉呈金黃色,醬汁變成稀糖漿(冷卻後變稠)。
6. 靜置5分鐘,然後把豬肉翻過來裹上醬汁。將豬肉和糖漿醬汁一起上桌。

材料:
- 4 pork collar steaks, cut in half to make 8 pieces, ~110g each
- 1 tsp each salt and pepper
- 100 g / 7 tbsp unsalted butter
- 1/2 cup / 80g brown sugar , loosely packed
- 1/4 cup / 65 ml cider vinegar (white wine or red wine vinegar also fine)
- 4 garlic cloves
- 1/4 tsp each salt and pepper

- Preheat oven to 160C/320F (standard) or 140C/290F (fan).
- Place Sauce ingredients in a saucepan over medium heat. Once better has melted, stir to combine then leave for 1 - 2 minutes until sugar is melted. Remove from heat.
- Sprinkle pork pieces all over with salt & pepper.
- Line pan with foil then parchment / baking paper, place pork in pan.
- Pour Sauce all over pork. Cover with foil. Bake for 1 hour 15 minutes.
- Remove from oven, remove foil. Turn pork. Return to oven uncovered for 20 minutes.
- Remove from oven. Turn pork, spoon pan juices over. Return to oven for 20 - 30 minutes or until pork is golden & sauce has reduced to a thin syrup (thickens more when it cools).
- Stand for 5 minutes, then turn pork to coat in sauce. Serve pork with syrupy pan sauce.
- Serve with Potatoes & Cabbage
