- 預熱烤箱至450°F。將牛小排放在淺烤盤的烤架上。烤30-40分鐘或至表面變棕色,中途翻一次。
- 同時,在鑄鐵鍋中以中火加熱奶油。加入洋蔥、芹菜和胡蘿蔔,煮並攪拌至軟化,約10-12分鐘。加入大蒜和百里香,再煮1分鐘。加入麵粉攪拌至混合均勻;逐漸加入水和紅酒。加入高湯塊和香菜,攪拌至高湯塊溶解。
- 將牛小排轉移至鑄鐵鍋中;煮至沸騰。降低火力,加蓋燉煮2至2.5小時,或直到肉質變軟。
