如何準備大蒜迷迭香烤羊排?
材料:
製作說明:
- 將羊肋排放在大托盤或碟子上,雙面均勻撒上鹽和黑胡椒調味。淋上橄欖油,使兩面都均勻裹上油。
- 將6枝迷迭香粗略切碎,剩下的2枝保留。將迷迭香和蒜末均勻撒在羊肋排上,然後蓋好,放入冰箱冷藏過夜。
- 準備烤架進行雙區域烹調(見上方連結的說明)。從冰箱取出羊肋排,輕輕刷去大部分的迷迭香和蒜末。
- 將羊肋排放在間接加熱區,烤20分鐘,然後翻面,烤另一面20分鐘,烤時需蓋上蓋子。
- 重新加旺炭火,然後直接將剩下的迷迭香枝放在炭火上,這將產生2-3分鐘的迷迭香煙霧(如果使用燃氣烤爐,省略燃燒迷迭香的步驟,並將燃氣調至最高)。立即將羊肋排移到直接加熱區,每面炙烤4-6分鐘,直到出現漂亮的焦痕。
- 將羊肋排從烤架上取下,用鋁箔蓋住,靜置10分鐘。然後切片,立即上桌享用。
