這道食譜相當簡單,也是香港各大餐廳中需求量很高的料理之一。豬肉先用紅酒醃製,然後與青蔥一起快炒。

如何準備蔥炒肉?

材料:

  • 400克豬臀肉
  • 5厘米薑
  • 1個洋蔥
  • 2湯匙食用油
  • 5根青蔥
  • 50毫升水
  • 1湯匙蠔油
  • 1湯匙生抽
  • 1湯匙玉米粉
  • 1茶匙芝麻油
  • 1/2茶匙糖

製作說明:

  1. 將豬臀肉切成薄片。
  2. 用蠔油、生抽、芝麻油、糖和玉米粉醃製豬肉片30分鐘或更長時間。
  3. 將薑切成薄片,洋蔥切成塊狀,青蔥切成約6厘米長的段。
  4. 在鍋中加熱2湯匙食用油,將薑和洋蔥炒至香氣四溢。
  5. 加入豬肉,用大火翻炒至均勻混合。加入50毫升水,煮至豬肉熟透。
  6. 最後加入青蔥,翻炒約3分鐘。盛盤上桌。
