如何準備科托望加錫?

材料:

  • 500克牛肉
  • 500克牛肚
  • 2根香茅(取白色部分,拍裂)
  • 2英寸南薑,拍裂
  • 1湯匙鹽
  • 1茶匙椰糖
  • 2公升水
  • 100克花生,烤過並粗略研磨
  • 5湯匙食用油

攪拌成醬料

  • 10瓣大蒜
  • 5個紅蔥頭
  • 4個紅辣椒
  • 4個泰國辣椒
  • 4顆蠟燭果
  • 2湯匙豆豉(發酵黃豆)
  • 4湯匙芫荽粉
  • 1湯匙黑胡椒粉

製作說明:

  1. 在湯鍋中加熱食用油,將香料醬炒至香氣四溢,約5分鐘。加入香茅、南薑、牛肉、牛肚、鹽、糖、花生和水,煮沸。
  2. 轉小火煨煮約30分鐘。
  3. 取出牛肉和牛肚,切成小塊。將切好的肉放回鍋中,再次煮沸,繼續煨煮1小時,直到變軟入味。
