如何準備中式烤豬肉?

材料:

  • 3至3.5磅豬腿肉(我使用1.5公斤無骨豬腿肉,約3又1/3磅)
  • 少許鹽(或按口味調整)
  • 1/2杯海鮮醬
  • 2湯匙蠔油
  • 2茶匙生抽
  • 2茶匙中國米酒或乾雪莉酒
  • 1茶匙五香粉
  • 1茶匙白胡椒粉
  • 2茶匙新鮮薑末
  • 2茶匙蒜末

製作說明:

  1. 準備所有食材
  2. 按口味將鹽抹在豬腿肉上。將剩餘的食材(海鮮醬、蠔油、生抽、米酒或乾雪莉酒、五香粉、白胡椒粉、薑末和蒜末)放入碗中,攪拌均勻。如果喜歡,可以取出2至3湯匙醃料,烘烤時刷在豬肉上
  3. 將豬肉放入大碗中,加入醃料,均勻塗抹在豬肉上(或者可以將豬肉和醃料放入大密封食品袋中)。蓋好,放入冰箱醃製至少1小時,若能醃更久更佳
  4. 準備烹調時,將烤箱預熱至華氏375度。將豬肉放入烤盤,去除多餘的醃料。將烤盤放在中層架上,烤1小時,然後將溫度降至華氏350度,繼續烤30分鐘或至全熟
