如何準備粵式蠔油牛肉?

材料:

  • 1磅臀肉或牛排
  • 1茶匙鹽
  • 適量黑胡椒
  • 2湯匙粟粉
  • 1個蛋清
  • 3片新鮮生薑
  • 4根青蔥
  • 4湯匙玉米油
  • 1湯匙牛油
  • 1 1/2湯匙牛肉湯
  • 1湯匙生抽
  • 1 1/2湯匙蠔油
  • 1湯匙米酒或乾雪莉酒

製作說明:

  1. 將牛肉切成細條,加入鹽和胡椒調味。拌入粟粉,並裹上蛋清,放置備用。
  2. 將薑切絲,青蔥斜切成1 1/2英寸的段。
  3. 在炒鍋或煎鍋中加熱油。油熱時,加入薑絲翻炒以增添香味。
  4. 加入牛肉,用大火翻炒約1分鐘。取出備用。
  5. 在鍋中加入牛油,油熱時翻炒青蔥1至2分鐘。加入牛肉湯和生抽,繼續翻炒30秒。
  6. 將牛肉放回鍋中,加入蠔油和米酒或雪莉酒,用大火翻炒30秒。
