如何準備粵式蠔油牛肉?
材料:
1磅臀肉或牛排
1茶匙鹽
適量黑胡椒
2湯匙粟粉
1個蛋清
3片新鮮生薑
4根青蔥
4湯匙玉米油
1湯匙牛油
1 1/2湯匙牛肉湯
1湯匙生抽
1 1/2湯匙蠔油
1湯匙米酒或乾雪莉酒
製作說明:
將牛肉切成細條,加入鹽和胡椒調味。拌入粟粉,並裹上蛋清,放置備用。
將薑切絲,青蔥斜切成1 1/2英寸的段。
在炒鍋或煎鍋中加熱油。油熱時,加入薑絲翻炒以增添香味。
加入牛肉,用大火翻炒約1分鐘。取出備用。
在鍋中加入牛油,油熱時翻炒青蔥1至2分鐘。加入牛肉湯和生抽,繼續翻炒30秒。
將牛肉放回鍋中,加入蠔油和米酒或雪莉酒,用大火翻炒30秒。
