如何準備粵式烤肉?

材料:

豬肉

  • 2磅豬里脊肉,切成1英寸厚的條狀

醃料

  • 3/4杯生抽
  • 1/4杯雪莉酒
  • 1/4杯糖
  • 1/2湯匙紅色食用色素(可選)
  • 2湯匙海鮮醬

糖漿

  • 1湯匙糖
  • 1湯匙熱水

製作說明:

  1. 將生抽、糖、雪莉酒、紅色食用色素和海鮮醬混合,這就是醃料。
  2. 將豬肉醃製至少1小時。
  3. 將豬肉切成與里脊肉同長、1英寸厚的條狀。準備木炭煙燻器,將水碗放在肉架和火源之間,將豬肉條放在上層架上。
  4. 保留醃料,煮沸7分鐘。
  5. 將糖和水混合,加熱3分鐘。
  6. 將糖水刷在豬肉上,煮至熟。
  7. 將豬肉放回醃料中再浸泡1小時,即完成。
