如何準備粵式乾式熟成五花肉?

材料:

  • 4磅五花肉切片
  • 150毫升San-J有機淡醬油
  • 50毫升李錦記特級老抽
  • 50毫升紹興酒
  • 50毫升朗姆酒
  • 120克紅糖
  • 60克海鹽
  • 20克花椒

製作說明:

  1. 在大型鑄鐵炒鍋中,用小火翻炒海鹽至淺棕色。加入花椒,繼續攪拌約1分鐘,直到散發香氣。
  2. 在中等大小的鍋中,將炒過的海鹽、花椒和紅糖溶解在加熱過的醬油混合物中。溶解後,關火,待混合物冷卻。加入米酒和朗姆酒。
  3. 將五花肉片浸泡在醃料中,室溫醃製48小時。
  4. 將五花肉掛起來風乾至少30天,視切片厚度也可延長至2個月。寒冷乾燥的日子最好將其掛在室外無直射陽光的地方。若遇到溫暖多雨的冬天,可以掛在加熱的室內,只要空氣不過於潮濕即可。冰箱中風乾也可以,但可能需要更長的時間,並且會佔用存儲空間。
