豬肉可以飼養出更長的里脊肉,可以多達17根肋骨,而牛肉和羊肉則只有13根。整塊豬里脊肉可以燒烤或者切成排骨或肉排。
豬里脊肉是最瘦、最嫩的部位。請小心避免將里脊肉過度烹煮。里脊肉的三個部分是:
- 最靠近肩膀的部分,往往脂肪較多
- 最靠近臀部的部分,往往帶骨頭
- 中央部分是最瘦最嫩的部分
烤豬里脊是通過將兩個上腰肉綁在一起,脂肪面朝外而製成的。
